The eaux-de-vie used in the production of a Hennessy V.S. cognac are aged in barrels made exclusively from French oak for at least 2 years. This "aging" period, during which the eaux-de-vie may rotate regularly between barrels and cellars, can last for years, even decades. After aging, each eau-de-vie retains its own specific characteristics.
